Masterchef India has been all over my mind and with so many different challenges I happened to do one. Took some not so popular ingredients and turned them into a cake.
Honey and Cinnamon is an interesting combo and quite an amazing one as well. Made a 2-layer Cake a few days back and I just couldn’t contain my excitement to share the recipe with you’ll. A soft honey-based vanilla sponge layered with Whipped cream, Honey and a punch of cinnamon taste. Saw some YouTube tutorials for some cake garnishes a few months back and with so much honey in the recipe what better than a honeycomb lookin’ garnishes right. Honey Cinnamon Cake
A soft sponge flavoured with some spice and topped with some honeycomb garnishes.
Ingredients
For Cake
- 60 gms Powdered sugar (1/2 cup)
- 40 ml Honey (3 tbsp)
- 120 gms Unsalted Butter (1 cup)
- 250 gms Refined Flour (2 cups)
- 125 gms Milk powder (1 cup)
- 5 gms Baking powder (1 1/4th tsp)
- 3 gms Baking soda (3/4th tsp)
- 5 ml Vanilla Extract (1 tsp)
- 200 ml Milk (1 cup)
For Icing
- 500 ml Heavy cream (sweetened) (2 1/2 cups)
- 8 strands Saffron
- 10 ml Milk (2 tsp)
- 42 gms Cinnamon Powder (2 tbsp)
For Decoration
- 100 gms Sugar (4/5th cup)
- a pinch Baking soda
- 100 gms White Chocolate
Instructions
Cake Sponge
- Cream together sugar, butter, and honey. Whisk till sugar is well combined. Add in the vanilla extract and mix together.
- Sieve in the Refined flour, Milk powder, baking powder, and baking soda. Add in the milk gradually and fold in the batter.
- Transfer the batter to a greased cake mould of your choice and bake the cake in a preheated oven for 20-25 Mins at 170-degree Celsius.
Icing
- Whip some heavy cream, add in the saffron soaked milk to it and beat ittill stiff peaks.
- Cut the cake into layers once cool. Add in the cream in between, drizzle some honey and Cinnamon powder in between. Continue till all layers are complete, I made only 2 layers for mine.
- Coat the entire cake with some whipped cream. Refrigerate for some time. Now decorate your cake with some more whipped cream, I put the icing like a baked Alaska. Sprinkle some more cinnamon powder on top of the cake.
Decorations
- Melt some white chocolate, add it to a bubble wrap this will give a honeycomb effect. Set in the refrigerator until it sets. (yes, the wrapwhich comes with your Amazon products)
- For the second type of cake decoration, start by making a sugar caramel without any water. Once your sugar caramelizes add in a pinch of baking soda and move aside because it is about to bubble up super fast. Add the hot mixture to a baking paper-lined cake mould and let it cool down. Once cool, break into pieces and put them on your cake.
- Your lovely Simple and a lip-smacking honey cinnamon cake is ready!!!
