Honestly, I am not a pancake person but since I love waffles, both have the same batter and since I didn’t have a waffle maker at home I made these today. Very simple to make, light fluffy and a perfect breakfast treat. Drizzled mine in some honey syrup and a dollop of butter. I have tried making these before, failed since they were very flat and uncooked.
Tweaked this recipe with just the right balance of ingredients and trust me your pancakes will be so much better, just follow along with the recipe below. These are super easy to make, tastes just like cake and since there are not many sweet treats on the breakfast menu these really make up for an amazing dish, Happy Cooking!!!

Eggless Pancakes
A soft and fluffy cake made on a griddle and served with some honey and butter.
Ingredients
For Pancakes
- 120 gms Refined Flour (1 cup)
- 25 gms sugar (2 tbsp)
- 4 gms Baking powder (1 tsp)
- 2 gms Baking soda (1/2 tsp)
- a pinch salt
- 5 ml Vanilla Extract (1 tsp)
- 15 ml Oil (1 tbsp)
- 200 ml Milk (1 cup)
Garnish/ Toppings
- 50 ml Honey (1/2 cup)
- 10 gms Butter (2 tsp)
Instructions
- In a bowl add refined flour, powdered Sugar, Baking powder, baking soda, salt and some oil. Mix the mixture together. Add Vanilla extract for flavouring.
- Pour the milk to it and mix it well using a whisk. NOTE: Pour little milk at a time or you might get a lumpy batter.
- Rest the batter for about 10 Mins. Heat the griddle until that time.
- Once done, pour some mixture on the hot oil, use a non-stick pan and since we have added the oil in the batter you don't need more oil, it will release on its own. Add some butter is the batter is sticking.
- Remove the hot pancakes and serve them with some butter and honey, traditionally they serve it with maple syrup but I could find any nearby, Haha. Serve hot!!!
