Lemon is something I have been fond of ever since I had lemon cupcakes and I always try to incorporate them into desserts the minute I get the chance. Since we are talking about cookies all week long I baked a fresh batch, a few days back and trust me they are so worth the long procedure of cookies, cream and jelly.

Soft vanilla cookies stuffed with some zesty buttercream, lemon jelly and some powder sugar. Tempting enough??? Follow along with the simple steps and trust me, you’ll get a perfect treat in the first go itself. This simple yet so lovely looking cookie is just perfect for those tea parties. Happy Baking!!!

A fancy lookin' cookie filled with a lovely lemony buttercream and a transparent jelly.

Ingredients
  

For Cookies

  • Refined Flour
  • Icing sugar
  • Unsalted Butter
  • Vanilla Extract
  • water

For Icing

  • Unsalted Butter
  • Icing sugar
  • Lemon juice
  • Lemon zest

For Jelly

  • water
  • Lemon juice
  • sugar
  • salt
  • Agar Agar Powder

Instructions
 

For Cookies

  • In a bowl, cream together butter and sugar till its fluffy, and the sugar dissolves.
  • Add in the vanilla extract and refined flour and make a stiff dough out of it. Add in a little bit of water to adjust the stiffness.
  • Roll the dough and cut into a circle using a cutter. (Half full circle and half only ring-shaped, check the picture if you didn't ring get that)
  • Line them on a perforated sheet and bake in a preheated oven at 150 degrees for about 12-15 Mins.

For filling

  • We are going to make a classic buttercream but lemon flavoured. Cream together butter and icing sugar, add in the lemon juice and jest. I have added a little bit of food colour just for the picture but you can totally avoid it.
  • Pipe the buttercream in between the cookies and dust some powder sugar on the cookies.

For Jelly

  • Make lemonade using water, lemon, sugar, and salt. Add in agar-agar to the mixture and boil the liquid, simmer for about 1 min. Let it cool and then set it on a plate. Cut them into a circle and place it in the circular part in between the cookies.
  • Once you are done you should end up with a pretty lookin' cookie. Enjoy!!!
