What better than a dose of seasonal fruits to end your day. Made some simple, lychee- pineapple popsicles Yesterday and they turned out amazing. A layer of sweetness with a hint of sourness, so good. They are super simple to make, takes few ingredients and the best part, takes very less time to make.
Lychee-Pineapple Popsicle
A sweet seasonal popsicle with a touch of sourness, coated in pineapple juliennes.
Ingredients
- 250 gms Frozen Pineapple
- 5 ml Lemon juice (1 tsp)
- 4 gms Sugar (1 tsp)
- 5 ml Honey (1 tsp)
- a pinch Black Pepper
- 250 gms Frozen Lychee
Instructions
- Start by making the lychee part of the popsicle.
- Take frozen lychees, a tsp of sugar and a tsp of lemon juice, Blend it. You will end with a chilled lychee juice, fill the mould halfway and freeze for 3 hours.
- For the Pineapple part, take about 200gm of frozen pineapple, a pinch of black pepper and some honey, blend it and fill the other half of the moulds.
- Freeze them overnight, demould and cover in pineapple juliennes (very fine long stripes) and done.
