Hazelnut Chocolate Brownies

Born in a family who is not a big-time chocolate fan, Brownies were something made in very little quantity for me and my brother, rarely. Being a food blogger for the past 2 years now, I have tried brownies at many places around Pune. With so many variants such a cakey, chewy and fudgy type of brownies the cakey variant is something I personally love. I haven’t baked a lot of brownies in my baking journey so far but I have managed to come up with a decent recipe.

The recipe yields a cakey brownie with a high dose of cocoa. Topped these with some hazelnuts because I forgot to bring walnuts from the market. Added some salt to the brownies which adds a slight saltiness as well as enhances the cocoa dose in the brownie giving your palate a perfectly balanced taste. HAPPY BAKING!!!

Ingredients
  

  • 30 gms Unsalted Butter (1/4th cup)
  • 60 gms Powdered sugar (1/2 cup)
  • 30 ml Oil (2 tbsp)
  • 30 gms Milk powder (1/4cup)
  • 50 gms Cocoa Powder (1/2 cup)
  • 10 ml Coffee Decoction (2 tsp)
  • 120 gms Refined Flour (1 cup)
  • 4 gms Baking powder (1 tsp)
  • 120 ml Milk (3/5th cup)
  • 20 gms Hazelnuts
  • 5 gms Kosher Salt (optional) (1 tsp)

Instructions
 

  • Start by weighing all ingredients and sifting all dry ingredients together.
  • In another bowl, cream together unsalted butter, oil, and Sugar (Soften mixture).
  • Add in the coffee decoction to the mixture, a coffee decoction is one part of coffee powder to one part warm water.
    NOTE: This is an optional step but highly recommended. The coffee enhances the chocolate flavour resulting in a rich product.
  • Moving on, Sift in the dry ingredients to the bowl and fold into the mixture.
  • Add milk to the mixture in order to adjust consistency.
  • Transfer the batter to a pre-greased/ baking paper-lined tray. Top with Hazelnuts and bake at 170 degrees Celsius or 338 degrees Fahrenheit for 20-25 Mins or till toothpick comes out clean.
  • Cool for some time and demould the tray, top with chocolate ganache/ kosher salt as per preference.
