Tutti fruitti Cake Loaf

Indians have a great amount of love for bread, Be it with pav bhaji or be it with Puneri misal. With a country that also has a great deal of love for tutti fruitti cakes, I came up with a great recipe using both these elements. Your breakfast has a new addition which is an absolute crowd-pleaser. Trust me people are going to end up asking for more.

Tutti Fruitti Loaf Cake

A spongy loaf of cake full of tutti fruitti goodness to accompany your Chai.

Ingredients
  

  • 60 gms Loni (Unclarified butter)/ Unsalted Butter (1/2 cup)
  • 60 gms Icing sugar (1/2 cup)
  • 60 gms Milk powder (1/2 cup)
  • 5 ml Vanilla Extract (1 tsp)
  • 120 gms Refined Flour (1 cup)
  • 5 gms Baking powder (1 1/4th tsp)
  • 2 gms Baking soda (1/2 tsp)
  • 130 ml Milk (2/5th cup)
  • 30 gms Tutti Fruitti

Instructions
 

  • In a bowl, start by creaming butter till it softens. Add in the icing sugar to the butter, small portions at a time, and whisk till the sugar dissolves. Add in the vanilla extract and stir it.
  • Take a sieve; sift in Milk powder, refined flour, Baking powder, and baking soda into the mixture.
  • Pour the milk gradually into the mixture & fold it.
    Note- the mixture should be combined using a spatula, not a whisk. Use whisk only if you see lumps forming, over whisking the batter might result in a bad product.
  • Add milk to adjust consistency, you want the batter to be at dropping consistency....... too thick of a batter will result in dense cake while too thin of a batter will result in an uncooked product.
  • Add in the tutti fruitti into the batter and fold well.
  • Grease your loaf mould using butter & refined flour or use butter paper instead.
  • Transfer the batter into the mould and bake them in a preheated oven at 170-degree Celsius or 338-degree Fahrenheit for about 18-25 mins.
  • Your Scrumptious loaf of tutti fruitti goodness is ready!!

Notes

  • Keep an eye on your product all the time, poke the loaf to check if it is baked properly. Clean toothpick without any batter ensures that the loaf is fully baked.
