I am not a chai person but when it comes to making dessert using it, I’m all in for it.
I was sipping a cup of tea a few days back when I thought about making this dessert, but to make things interesting and complicated I restricted myself from using chocolate and biscuits in any form. After a lot of thinking, researching, and eliminating pairings that don’t go with tea, I finally made it. A layered dessert with a soft chai soaked sponge, a dulce de leche sauce, some caramel honeycomb shards, some whipped cream, and a bunch of spices to amp up the flavors, even though I am not a tea person, I can have this every day.
Chai Dessert
A layered cup of chai soaked sponge cake, a caramelized sauce, and honeycomb shards.
Ingredients
- 50 gms Vanilla sponge cake (4 slices)
- 8 gms Tea leaves (2 tsp)
- 50 ml Milk (1/4th cup)
- 60 ml Condensed milk (1/4th cup)
- 30 gms sugar (2 tbsp)
- 10 ml Honey (2 tsp)
- 1 gm Baking soda (1/8th tsp)
- 100 ml Whipping cream (before whipping)
- Spice powders (Nutmeg, Ginger, Cinnamon & Cardamom) as needed

Cake layer
Dulce de Leche
- Take the condensed milk in an oven-safe bowl and microwave it for 60 seconds, stir and microwave another 30 seconds. (this is an easy way, you can even bake it in an oven for about 90 mins at 150 degrees for a similar result). NOTE: Use a bigger bowl when putting in a microwave because it'll rise and might come out of the bowl.
- Stir the Dulce de leche and add a tbsp. of normal condensed milk to it, stir and your sauce is now ready.
Honeycomb Shards
- Take sugar and honey in a non stick pan and start to make a caramel. Once the caramel is dark enough and bubbling, add the baking soda to it, stir quickly and pour the bubbling mixture on a silicone mat. Let it sit at room temperature and break them into pieces once layering the dessert.
Layering
- For the final whipping cream layer, take some whipping cream and whip till stiff peaks, transfer into a piping bag and keep it ready for garnishing.
- Assemble all the elements together in a glass, layer by layer and serve.
