Started my day having a peanut butter jelly sandwich and I had a strange but tasty idea. A PBJ Cookie? Sounds interesting right. I’ve been meaning to make some chocolate cookies and well we merged both the things. Super simple, a super crisp Chocolate cookie that beats all the other cookies out there.

Chocolate PBJ Cookies
A chocolate sable cookie filled with peanut butter frosting and jam with a touch of salt.
Ingredients
- 90 gms Butter (3/4 Cup)
- 90 gms Sugar, Powdered (3/4 Cup)
- 150 gms Refined Flour (1.25 Cup)
- 3 tbsp Cocoa Powder
- 4 tbsp Peanut Butter
- Jam (As Needed)
Instructions
- Take some cream in a bowl together with 1/2 cup of butter and 1/2 cup powdered sugar. Mix till it is smooth.
- Sift in flour and cocoa powder into the bowl and mix till you get a soft dough.
- Once the dough is ready, make small balls and roll them. Cut circular pieces using a cookie cutter and align them in a baking tray.
- Bake them at 150 degrees Celsius or 302 degrees Fahrenheit for 12 minutes. Remove and let them cool completely. NOTE: They will be soft to touch when you take them out of the oven but they will turn hard once they are cool.
- For the peanut butter frosting, take 1/4th cup butter and 1/4th cup powdered sugar and beat them till smooth. Add homemade peanut butter to it and fold the frosting. Fill in a piping bag and pipe on cookies.
- Place another cookie on it and top off with some jam.
- Enjoy the cookies!
