Even though I made this last year I just couldn’t find a perfect day to share this on and since it’s almost Valentine’s day here’s something you can make for your special someone. A simple but beautifully lookin’ rose cake, why rose because what says love better than rose right.
A tricolored rose cake filled with lots of surprises, jellies, and gulkand. OK, I just said surprises, and I told you what they were in the very second line because that’s how excited I am to share this recipe with you. a soft, simple cake covered in every Indian’s favourite icing, the whipped cream, layered with rose jellies, gulkand, and lavender cream. Ultimate Rose Cake
A simple lookin' tricoloured rose cake filled with a lot of surprises.
Ingredients
For Cake
- 120 gms Unsaltsed Butter (1 cup)
- 90 gms Icing sugar (3/4th cup)
- 120 gms Milk powder (1 cup)
- 10 ml Rose emulsion (2 tsp)
- 180 gms Refined Flour (1 1/2 cup)
- 8 gms Baking powder (2 tsp)
- 3 gms Baking soda (3/4th tsp)
- 180 ml Milk (1 cup)
For Icing
- 500 ml Heavy cream (sweetened) (2 1/2 cups)
- 5 ml Rose Emulsion (1 tsp)
- 2.5 ml Lavender emulsion (1/2 tsp)
- 60 gms Rose Gulkand (4 tbsp)
- 20 ml Rosewater (4 tsp)
- White Chocolate (for dripping/as per choice)
For Jelly
- Rose syrup
- Agar Agar
Instructions
- Let the cake sponge cool down. Until then take some heavy cream in a bowl and whip it on high speed till soft peaks. Divide into three parts.
- Add in the rose emulsion to one, Lavender emulsion to another , and leave the rest plain white. Whip the cream again till stiff peaks.
- On to the jelly, In a pan Rose syrup and agar-agar powder and bring it to a boil. Let it cool down and set in a circular mould for about 1 hour.
- On to the cake. Start by cutting the cake into layers. (Check the cake cutting trick by Buzzfeed tasty, the one with toothpicks and floss, very helpful)
- Add in some dilute rose water in between layers. Add in the white whipped cream in between and gulkand.
- Add in the set jelly layers in between and repeat the same until all layers are done.
- Cover the entire cake in White, Give it a crumb coat. (Crumb coat is basically a thin layer to cover the crumbs so that they don't stick to the icing which is seen from outside)
- Now start by piping dark to light colors from the bottom, Violet in the bottom, then pink and then white, scrape it off using a spatula until smooth. You should end up with a tricolor cake.
- Add some rose emulsion to the melted white chocolate and cover the cake by gently dripping the melted chocolate in the sides.
- Top the cake using some Cake crumbs and some random piping and finish with a rose. There you go. Your ultimate rose cake is ready!!!
